Steak Knife

This steak knife is handcrafted by craftsmen using the Echizen Uchihamano (forged blades) technique and uses 70 multi-layer stainless steel.  The Echizen Uchihamono is designated as a Japanese traditional craft and has a history of over 700 years.  This knife with exceptional cutting ability and beauty is what a chef would consider the ideal steak knife and utilizes the highest level of Japanese craftmanship.

Beautiful patterns on the blade represent the special skills of Echizen Uchihamano craftsmen.  multi-layers of soft and hard steel are forged and the surface is polished completely.  Having pattern all the way to the edge of the blade allows for extreme sharpness.  The Ryusen-Lin pattern is a distinctive technique passed down by Ryusen Hamano craftsmen through the years.

 "Echizen cutlery all began in 1337 (period of the Northern and Southern dynasties), when a swordsmith from Kyoto, Chiyo Hak Guoan who was in search for a land suitable for production for swords went to live in Fuchu (current Echizen City) and made scythes for local farmers.

 

Every time Guoan made a sword, he used a grinding stone to carve  a lion (guardian lion dog at Shinto shrine) and sank them into a well.  On a sword, he carved his wishes as a craftma, that "a sword should never be used to kill a human being and it continues to be the symbol of samurai".  This spirit lives on in a form of creating "the best tools" to Echizen cutlery craftsmen.

 

Current Echizen forged blades are still being made using fire forging techniques and sharpening by hand which was used in ancient times in Japan. Forging is an important technology in the making a sword with blade that won't bend or break.

 

Echizen forged blades are highly valued in their history and technology and in 1979, Echizen city was designated as the land of cutlery production and the very first traditonal hand craft in Japan.
